Can I use 3/4″ plywood for the decking or what do you suggest?

Yes, you can use thick plywood for the decking. As long as you edge band the pieces that are exposed to prevent splintering, you will be fine.

A quality piece of 3/4″ plywood is strong enough to hold most kids, and as long as you make the piece safe for the kids using the tower, there is no reason not to use ply instead of solid.
